Grilled Chicken Caesar Salad with Whole Grain Croutons Recipe

Indulge in a healthy and delicious Grilled Chicken Caesar Salad with Whole Grain Croutons. This recipe is easy to make and perfect for a quick lunch or dinner.

Ingredients:

  • 2 chicken breasts, grilled and sliced
  • 1 head of romaine lettuce, chopped
  • 1/2 cup of cherry tomatoes, halved
  • 1/4 cup of red onion, thinly sliced
  • 1/4 cup of grated Parmesan cheese
  • 1/4 cup of Caesar dressing
  • 2 slices of whole grain bread, cubed
  • 1 tablespoon of olive oil
  • 1/4 teaspoon of garlic powder
  • Salt and pepper to taste

Start by grilling the chicken breasts until they are fully cooked. Once done, slice the chicken into strips and set aside.

Next, prepare the whole grain croutons. Preheat the oven to 375°F. Cut the whole grain bread into small cubes and toss them with olive oil, garlic powder, salt, and pepper. Spread the bread cubes on a baking sheet and bake for 10-12 minutes or until they are golden brown and crispy.

Meanwhile, chop the romaine lettuce and place it in a large bowl. Add the cherry tomatoes, red onion, and Parmesan cheese to the bowl. Pour the Caesar dressing over the salad and toss until all ingredients are well coated.
