This low-carb version of mac and cheese is made with cauliflower instead of pasta, making it perfect for those following a keto diet. It's a delicious and healthy alternative that's easy to make and tastes just as good as the real thing.
Ingredients
- 1 head cauliflower, cut into small florets
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 4 oz cream cheese
- 2 cloves garlic, minced
- 1/2 tsp paprika
- 1/2 tsp onion powder
- 1/2 tsp dried mustard
- Salt and pepper, to taste
Instructions
- Preheat the oven to 375°F.
- Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 5-7 minutes, or until tender. Drain and set aside.
- In a saucepan, heat the heavy cream, cheddar cheese, cream cheese, garlic, paprika, onion powder, and dried mustard over medium heat. Stir until the cheese is melted and the sauce is smooth.
- Add the cooked cauliflower to the saucepan and stir until well coated.
- Transfer the cauliflower mixture to a baking dish and bake for 15-20 minutes, or until bubbly and golden brown on top.
- Top with bacon bits and green onions and serve immediately.
