Keto Cauliflower Mac and Cheese Recipe

Description

This low-carb version of mac and cheese is made with cauliflower instead of pasta, making it perfect for those following a keto diet. It's a delicious and healthy alternative that's easy to make and tastes just as good as the real thing.

Ingredients

  • 1 head cauliflower, cut into small florets
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 4 oz cream cheese
  • 2 cloves garlic, minced
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp dried mustard
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F.
  2. Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 5-7 minutes, or until tender. Drain and set aside.
  3. In a saucepan, heat the heavy cream, cheddar cheese, cream cheese, garlic, paprika, onion powder, and dried mustard over medium heat. Stir until the cheese is melted and the sauce is smooth.
  4. Add the cooked cauliflower to the saucepan and stir until well coated.
  5. Transfer the cauliflower mixture to a baking dish and bake for 15-20 minutes, or until bubbly and golden brown on top.
  6. Top with bacon bits and green onions and serve immediately.
