Lemon Herb Roasted Chicken with Mashed Potatoes Recipe

Ingredients:

  • 1 whole chicken (about 4 lbs)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped fresh thyme leaves
  • 2 tablespoons chopped fresh rosemary leaves
  • 2 tablespoons chopped fresh parsley leaves
  • 1 tablespoon minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 medium potatoes, peeled and diced
  • 1/4 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste

Preheat the oven to 400°F. Rinse the chicken and pat it dry with paper towels. In a small bowl, mix together the olive oil, lemon juice, thyme, rosemary, parsley, garlic, salt, and pepper. Rub the seasoning mixture all over the chicken, including under the skin and inside the cavity. Place the chicken in a roasting pan and roast for about 1 hour and 20 minutes, or until the internal temperature reaches 165°F.

While the chicken is cooking, prepare the mashed potatoes. Peel and dice the potatoes into small pieces and place them in a pot of boiling salted water. Cook for about 15-20 minutes or until tender. Drain the water and add the milk and butter. Mash the potatoes until smooth and creamy. Season with salt and pepper to taste.
