Ingredients
- 1 medium green papaya, peeled and shredded
- 1/2 cup cherry tomatoes, halved
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup chopped peanuts
- 2 cloves garlic, minced
- 2 Thai chili peppers, minced
- 3 tablespoons fish sauce
- 3 tablespoons lime juice
- 1 tablespoon brown sugar
Instructions
- In a large bowl, combine the shredded green papaya, cherry tomatoes, cilantro, and mint.
- In a small bowl, whisk together the garlic, chili peppers, fish sauce, lime juice, and brown sugar.
- Pour the dressing over the salad and toss to combine.
- Sprinkle the chopped peanuts over the top of the salad.
