Tantalizing Taiwanese Beef Noodle Soup Recipe

Get ready to tantalize your taste buds with this delicious Taiwanese beef noodle soup recipe. This hearty and flavorful soup is a staple in Taiwanese cuisine, and it's easy to see why. With tender beef, chewy noodles, and a rich broth, it's the perfect comfort food for any occasion.

Ingredients:

  • 1 lb beef shank
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1-inch piece ginger, sliced
  • 2 star anise
  • 1 cinnamon stick
  • 1 tsp Sichuan peppercorns
  • 1 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp rice wine
  • 1 tbsp brown sugar
  • 6 cups water
  • 2 cups beef broth
  • 1 lb fresh wheat noodles
  • Bok choy or other leafy green vegetables

To make this delicious soup, start by browning the beef shank in a large pot over medium-high heat. Once browned on all sides, remove the beef and set it aside. In the same pot, sauté the onion, garlic, and ginger until fragrant.

Add the star anise, cinnamon stick, and Sichuan peppercorns to the pot and stir well. Then, add the soy sauce, dark soy sauce, rice wine, and brown sugar, and stir until everything is well combined.

Add the water and beef broth to the pot, and bring everything to a boil. Then, reduce the heat to low, cover the pot, and let everything simmer for 2-3 hours, or until the beef is tender and the flavors have melded together.

While the soup is simmering, cook the wheat noodles according to the package instructions. Once the beef is tender, remove it from the pot and shred it into bite-sized pieces. Return the beef to the pot, along with the cooked noodles and any leafy green vegetables you like (we recommend bok choy).

Simmer everything together for another 5-10 minutes, until the vegetables are tender and the flavors have melded together. Serve hot and enjoy!
