Ingredients
- 1 pound ground turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Whole-grain crackers for serving
Instructions
- In a large pot, cook the ground turkey over medium heat until no longer pink, breaking it up into small pieces as it cooks.
- Add the onion and garlic and cook for 2-3 minutes, until the onion is translucent.
- Add the red and yellow bell peppers and cook for another 2-3 minutes, until the peppers are slightly softened.
- Add the diced tomatoes, black beans, corn, chili powder, cumin, paprika, salt, and black pepper. Stir to combine.
- Bring the mixture to a simmer and cook for 15-20 minutes, until the vegetables are tender and the flavors have melded together.
- Serve the chili hot with whole-grain crackers on the side.
