Ingredients:
- 1 head of cauliflower, grated or riced
- 1 lb. boneless, skinless chicken breast, diced
- 1 red bell pepper, diced
- 1 onion, diced
- 2 garlic cloves, minced
- 2 tbsp. olive oil
- 2 eggs, beaten
- 1 tsp. sesame oil
- 2 tbsp. soy sauce
- Salt and pepper to taste
Before starting, make sure to grate or rice your cauliflower. You can use a food processor or a grater for this step. Once you have your cauliflower ready, set it aside.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Add the bell pepper and onion to the skillet and cook until softened, about 5 minutes. Add the garlic and cook for an additional minute.
