If you're looking for a comforting and delicious meal, this slow cooker beef stew is the perfect dish to warm you up on a chilly day. With tender chunks of beef, hearty vegetables, and a rich broth, this stew is packed with flavor and nutrition.

Ingredients:

  • 2 pounds beef stew meat, cut into bite-sized pieces
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, chopped
  • 3 potatoes, chopped
  • 1 cup frozen peas
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste

Instructions:

  1. In a large skillet, brown the beef over medium-high heat until it's evenly browned on all sides. Transfer the beef to a slow cooker.
  2. Add the onion, garlic, carrots, potatoes, and frozen peas to the slow cooker.
  3. In a separate bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Pour the mixture over the beef and vegetables in the slow cooker.
  4. Cook on low for 8 hours or on high for 4 hours, or until the beef is tender and the vegetables are cooked through.
  5. Serve hot and enjoy!

Tips:

  • For a thicker stew, whisk together 2 tablespoons of cornstarch with 2 tablespoons of water and stir it into the slow cooker during the last 30 minutes of cooking.
  • You can also add other vegetables to the stew, such as celery, parsnips, or turnips.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days, or in the freezer for up to 3 months.
