If you're looking for a healthy, protein-packed meal that's quick and easy to make, then this Beef and Vegetable Stir-Fry with Quinoa recipe is perfect for you. This dish is loaded with colorful veggies, tender beef, and fluffy quinoa that will satisfy your taste buds and keep you feeling full for hours.
Ingredients:
- 1 pound beef sirloin, sliced into thin strips
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 cups cooked quinoa
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1 teaspoon salt
- 1 teaspoon black pepper
Start by heating 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the sliced beef and stir-fry for 3-4 minutes until browned. Remove the beef from the skillet and set it aside on a plate.
In the same skillet, add the sliced onions, minced garlic, and minced ginger. Stir-fry for 1-2 minutes until fragrant. Then, add the sliced bell peppers and continue to stir-fry for another 2-3 minutes until the peppers are tender-crisp.
While the veggies are cooking, whisk together the soy sauce, cornstarch, salt, and black pepper in a small bowl. Set this aside for later.
Once the veggies are cooked, add the browned beef back into the skillet. Then, pour the soy sauce mixture over the beef and veggies. Stir everything together until the sauce thickens and coats the beef and veggies.
To serve, spoon the beef and veggie stir-fry over a bed of cooked quinoa. Garnish with chopped green onions for an extra pop of flavor. Enjoy!
