If you're in the mood for some Middle Eastern flavor, you're in for a treat with this Instant Pot Chicken Shawarma recipe. It's a savory and satisfying dish that's perfect for any occasion.

Ingredients:

  • 2 lbs chicken thighs, boneless and skinless
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 tsp smoked paprika
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • Pita bread, for serving
  • Tzatziki sauce or hummus, for serving

Instructions:

  1. In a small bowl, mix together olive oil, lemon juice, smoked paprika, cumin, coriander, garlic powder, onion powder, turmeric, cinnamon, cayenne pepper, salt and pepper.
  2. Add chicken thighs to the Instant Pot and pour the spice mixture over the chicken, making sure it's coated evenly.
  3. Close the lid and turn the valve to "sealing".
  4. Set the Instant Pot to "Manual" mode and cook on high pressure for 10 minutes.
  5. Once the cooking time is up, allow the Instant Pot to release the pressure naturally for 10 minutes, then use the quick release to release any remaining pressure.
  6. Remove the chicken from the Instant Pot and shred it with two forks.
  7. Serve the chicken with pita bread and tzatziki sauce or hummus.

Tips:

  • For a more authentic touch, marinate the chicken in the spice mixture for at least 30 minutes before cooking.
  • If you prefer a crispy texture, you can broil the chicken in the oven for a few minutes after shredding it.
  • You can also add some chopped onions and bell peppers to the Instant Pot for a more flavorful dish.
