Ingredients:
- 2 lbs chicken thighs, boneless and skinless
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 tsp smoked paprika
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp turmeric
- 1/2 tsp cinnamon
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- Pita bread, for serving
- Tzatziki sauce or hummus, for serving
Instructions:
- In a small bowl, mix together olive oil, lemon juice, smoked paprika, cumin, coriander, garlic powder, onion powder, turmeric, cinnamon, cayenne pepper, salt and pepper.
- Add chicken thighs to the Instant Pot and pour the spice mixture over the chicken, making sure it's coated evenly.
- Close the lid and turn the valve to "sealing".
- Set the Instant Pot to "Manual" mode and cook on high pressure for 10 minutes.
- Once the cooking time is up, allow the Instant Pot to release the pressure naturally for 10 minutes, then use the quick release to release any remaining pressure.
- Remove the chicken from the Instant Pot and shred it with two forks.
- Serve the chicken with pita bread and tzatziki sauce or hummus.

- For a more authentic touch, marinate the chicken in the spice mixture for at least 30 minutes before cooking.
