If you're looking for a tasty Passover dish, look no further than these crispy potato latkes. Made with just a few simple ingredients, they're perfect for a festive meal or as a snack anytime.
Ingredients:
- 4 large potatoes, peeled and grated
- 1 onion, grated
- 2 eggs, beaten
- 1/4 cup matzo meal
- Salt and pepper to taste
- Oil for frying
To make the latkes, start by squeezing as much liquid as possible from the grated potatoes and onion. Mix in the beaten eggs, matzo meal, salt, and pepper until well combined.
Heat a thin layer of oil in a large frying pan over medium-high heat. Drop spoonfuls of the potato mixture into the hot oil and flatten them slightly with the back of the spoon. Fry for 2-3 minutes on each side, until golden brown and crispy.
Drain the latkes on paper towels and serve hot with sour cream or applesauce on top. Enjoy!
