Ingredients:
- 2 cups cooked chicken, shredded
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 6 large flour tortillas
- 2 cups shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
To make the quesadillas, heat the olive oil in a large skillet over medium-high heat. Add the sliced peppers and onions and sauté until they are tender and lightly browned. Add the shredded chicken to the skillet and stir to combine with the vegetables. Season with salt and pepper to taste.
