Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 cups mixed vegetables (such as broccoli, carrots, and snap peas)
- 1 tablespoon soy sauce
- 1 tablespoon hoisin sauce
- Salt and pepper to taste
Instructions:
- Rinse the quinoa and place it in a saucepan with 2 cups of water. Bring to a boil and then reduce the heat to low. Cover and simmer for 15-20 minutes, or until the quinoa is tender and the water is absorbed.
- Heat the olive oil in a large skillet over medium-high heat. Add the garlic and onion and sauté for 2-3 minutes, or until the onion is translucent.
- Add the sliced bell peppers and sauté for an additional 2-3 minutes.
- Add the mixed vegetables and sauté for 5-7 minutes, or until they are tender-crisp.
- Add the cooked quinoa to the skillet and stir to combine.
- Add the soy sauce, hoisin sauce, salt, and pepper and stir to combine.
- Cook for an additional 2-3 minutes, or until everything is heated through and well combined.
