Delicious Samgyetang Recipe: Korean Ginseng Chicken Soup

Samgyetang is a traditional Korean dish that is perfect for cold winter days. It is a chicken soup made with a whole chicken stuffed with sweet rice, garlic, and Korean ginseng. The soup is simmered for hours until the broth is rich and flavorful, and the chicken is tender and juicy.

Ingredients:

  • 1 whole chicken (about 3-4 lbs)
  • 1 cup sweet rice
  • 5-6 cloves of garlic
  • 2-3 pieces of Korean ginseng root
  • 10 cups of water
  • 1 tablespoon of salt
  • 1 teaspoon of black pepper
  • 1 tablespoon of sesame oil
  • 2-3 green onions, chopped

First, rinse the chicken and remove any excess fat. Soak the sweet rice in water for at least 30 minutes. Stuff the chicken cavity with sweet rice, garlic, and ginseng root. Truss the chicken with cotton twine to keep the stuffing inside.

In a large pot, bring 10 cups of water to a boil. Add the stuffed chicken, salt, and black pepper. Lower the heat and let the soup simmer for about 1.5 to 2 hours, or until the chicken is cooked through and the broth is flavorful.

Once the chicken is cooked, remove it from the pot and let it cool for a few minutes. Cut the chicken into bite-sized pieces and put them back into the pot. Add sesame oil and chopped green onions. Simmer for a few more minutes until everything is heated through.

Now your delicious Samgyetang is ready to be served! This chicken soup is not only tasty, but also packed with nutrients and health benefits from the ginseng. Enjoy it with some steamed rice and kimchi for a complete Korean meal.
