Ingredients:

  • 1 pound spaghetti
  • 1 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 4 large egg yolks
  • 1/2 teaspoon freshly ground black pepper
  • 8 slices bacon, cut into small pieces
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil

This classic Italian dish is made with spaghetti, bacon, and a rich, creamy sauce that is made with Parmesan cheese, heavy cream, and egg yolks. The addition of sweet green peas adds a pop of color and flavor to this dish.

Instructions:

  1. Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente, about 8-10 minutes.
  2. While the pasta cooks, whisk together the Parmesan cheese, heavy cream, egg yolks, and black pepper in a bowl. Set aside.
  3. In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside on a paper towel-lined plate.
  4. In the same skillet, add the garlic and cook until fragrant, about 30 seconds. Add the frozen peas and cook until heated through, about 2-3 minutes.
  5. Drain the pasta and reserve 1/2 cup of the pasta water.
  6. Add the pasta to the skillet with the garlic and peas. Toss to combine.
  7. Add the bacon to the skillet and toss again.
  8. Remove the skillet from heat and add the Parmesan cheese mixture. Toss to coat the pasta evenly with the sauce. If the sauce is too thick, add a splash of reserved pasta water to thin it out.
  9. Serve hot with additional Parmesan cheese and black pepper, if desired.
