Ingredients
- 6 bell peppers
- 1 pound lean ground beef
- 1 cup cooked brown rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/4 cup shredded Parmesan cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Cut off the tops of the bell peppers and remove the seeds and membranes.
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the onion and garlic to the skillet and cook until softened.
- Stir in the cooked brown rice, diced tomatoes, paprika, oregano, salt, and pepper.
- Spoon the beef and rice mixture into the bell peppers and place them in a baking dish.
- Sprinkle the shredded Parmesan cheese on top of each pepper.
- Bake for 30-35 minutes or until the peppers are tender and the cheese is melted and golden brown.
- Serve hot and enjoy!
