Ingredients:
- 2 pounds pork bones
- 6 cups water
- 1 onion, quartered
- 8 cloves garlic, crushed
- 1 inch ginger, sliced
- 2 tablespoons gochujang (Korean chili paste)
- 1 tablespoon gochugaru (Korean chili flakes)
- 2 potatoes, peeled and cubed
- 1 zucchini, sliced
- 2 green onions, chopped
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- Salt and pepper to taste
Start by washing the pork bones in cold water to remove any impurities. Then, place them in a large pot with the water, onion, garlic, and ginger. Bring the pot to a boil, then reduce the heat to low and let it simmer for about 2 hours. This will create a rich, flavorful broth.
Once the broth is ready, remove the pork bones and strain the liquid through a fine-mesh sieve. Return the broth to the pot and add the gochujang, gochugaru, soy sauce, and fish sauce. Stir well to combine, then add the potatoes and zucchini. Simmer for another 30 minutes, or until the vegetables are tender.
