Ingredients
- 4 bone-in pork chops
- 2 sweet potatoes, peeled and sliced into rounds
- 2 apples, cored and sliced into wedges
- 1/4 cup olive oil
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 2 teaspoons dried thyme
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F.
- In a small bowl, whisk together olive oil, honey, Dijon mustard, dried thyme, salt, and pepper.
- Place pork chops in a baking dish and brush with half of the olive oil mixture. Bake in the preheated oven for 20 minutes.
- While the pork chops are baking, toss sweet potatoes and apples with the remaining olive oil mixture. Add the sweet potato and apple mixture to the baking dish with the pork chops.
- Bake for an additional 20-25 minutes, or until the sweet potatoes are tender and the pork chops are cooked through.
Serving Suggestions
Serve the pork chops with the sweet potato and apple mixture on the side for a complete meal. This dish pairs well with a side salad or steamed green beans.
