Ingredients:
- 1 block of halloumi cheese
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon honey
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- 1 clove garlic, minced
- Salt and pepper to taste
To start, slice the halloumi cheese into 1/4 inch thick pieces. In a small bowl, whisk together the olive oil, lemon juice, honey, thyme, rosemary, garlic, salt, and pepper to create the marinade. Place the halloumi cheese slices in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes to allow the flavors to infuse.
Preheat your grill to medium-high heat. Remove the cheese slices from the marinade and place them on the grill. Cook for 2-3 minutes on each side, or until grill marks appear and the cheese is slightly softened.
Remove the grilled halloumi cheese from the grill and place them on a serving platter. Garnish with additional fresh thyme and a squeeze of lemon juice, if desired. Serve hot and enjoy!
