Grilled Shrimp and Vegetable Skewers with Citrus Marinade Recipe

Ingredients

  • 1 lb. large shrimp, peeled and deveined
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, cut into rounds
  • 1 yellow squash, cut into rounds
  • 1/4 cup olive oil
  • 1/4 cup freshly squeezed orange juice
  • 2 tbsp. freshly squeezed lemon juice
  • 2 tbsp. honey
  • 1 tbsp. Dijon mustard
  • 2 garlic cloves, minced
  • Salt and pepper, to taste

Start by soaking wooden skewers in water for at least 30 minutes. This will prevent them from burning on the grill.

In a small bowl, whisk together the olive oil, orange juice, lemon juice, honey, Dijon mustard, garlic, salt and pepper. Reserve 1/4 cup of the marinade for later.

Place the shrimp and vegetables on separate plates and brush them with the marinade. Cover and refrigerate for at least 30 minutes.

Preheat your grill to medium-high heat. Thread the shrimp and vegetables onto the skewers, alternating between them. Discard any remaining marinade that was used to brush the raw shrimp and vegetables.

Grill the skewers for 3-4 minutes per side, or until the shrimp are pink and opaque and the vegetables are tender and slightly charred. Brush the reserved marinade over the skewers during the last minute of cooking.

Serve the skewers hot, garnished with fresh herbs and lemon wedges. Enjoy!
