Ingredients:
- 2 lbs boneless, skinless chicken breasts
- 4 cups low-sodium chicken broth
- 1 can condensed cream of chicken soup
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 stalks celery, chopped
- 2 large carrots, peeled and chopped
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1 bay leaf
- Salt and pepper, to taste
- 1 cup frozen peas
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 2 tbsp unsalted butter, melted
First, place the chicken breasts, chicken broth, cream of chicken soup, onion, garlic, celery, carrots, thyme, parsley, bay leaf, salt, and pepper in a slow cooker. Cook on low for 6-8 hours, or until the chicken is tender and cooked through.
Next, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker, along with the frozen peas.
In a separate bowl, whisk together the flour, baking powder, salt, milk, and butter until a thick batter forms. Drop spoonfuls of the batter onto the chicken and vegetable mixture in the slow cooker.
