Ingredients:
- 1 lb large shrimp, peeled and deveined
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 8-10 tortillas
- 1 avocado, diced
- 1/2 red onion, diced
- 1 jalapeño pepper, seeded and diced
- 1 lime, juiced
- 1/4 cup chopped cilantro
Start by heating up your grill or grill pan to medium-high heat. In a small bowl, mix together the chili powder, cumin, garlic powder, salt, and black pepper. Thread the shrimp onto skewers and brush with olive oil. Sprinkle the spice mixture over the shrimp and grill for 2-3 minutes per side, or until cooked through.
While the shrimp is cooking, make the avocado salsa. In a medium bowl, combine the diced avocado, red onion, jalapeño pepper, lime juice, and cilantro. Mix well and season with salt and pepper to taste.
To assemble the tacos, warm up the tortillas on the grill or in the microwave for a few seconds. Divide the grilled shrimp among the tortillas and top with the avocado salsa. Serve with additional lime wedges and cilantro, if desired.
