Cajun-Style Shrimp and Sausage Jambalaya Recipe

Ingredients:

  • 1 lb. large shrimp, peeled and deveined
  • 1 lb. smoked sausage, sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes, drained
  • 2 cups chicken broth
  • 1 cup long-grain rice
  • 2 tbsp. Cajun seasoning
  • 1 tsp. paprika
  • 1/2 tsp. dried thyme
  • 1/4 tsp. cayenne pepper
  • 2 tbsp. olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove the sausage from the pot and set aside.
  2. Add the diced onion and bell pepper to the pot and cook until softened, about 3 minutes. Add the minced garlic and cook for an additional minute.
  3. Stir in the drained diced tomatoes, Cajun seasoning, paprika, thyme, and cayenne pepper. Cook for 2-3 minutes, stirring frequently.
  4. Add the uncooked rice and stir to coat with the vegetable and spice mixture. Pour in the chicken broth and bring to a boil.
  5. Reduce the heat to low and cover the pot. Simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.
  6. Add the cooked sausage and peeled shrimp to the pot. Stir well and cook for 4-5 minutes, or until the shrimp are pink and cooked through.
  7. Taste the jambalaya and add salt and pepper as needed. Serve hot and enjoy!
