Ingredients:
- 1 lb. large shrimp, peeled and deveined
- 1 lb. smoked sausage, sliced
- 1 onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes, drained
- 2 cups chicken broth
- 1 cup long-grain rice
- 2 tbsp. Cajun seasoning
- 1 tsp. paprika
- 1/2 tsp. dried thyme
- 1/4 tsp. cayenne pepper
- 2 tbsp. olive oil
- Salt and pepper to taste
Instructions:
- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove the sausage from the pot and set aside.
- Add the diced onion and bell pepper to the pot and cook until softened, about 3 minutes. Add the minced garlic and cook for an additional minute.
- Stir in the drained diced tomatoes, Cajun seasoning, paprika, thyme, and cayenne pepper. Cook for 2-3 minutes, stirring frequently.
- Add the uncooked rice and stir to coat with the vegetable and spice mixture. Pour in the chicken broth and bring to a boil.
- Reduce the heat to low and cover the pot. Simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.
- Add the cooked sausage and peeled shrimp to the pot. Stir well and cook for 4-5 minutes, or until the shrimp are pink and cooked through.
