Ingredients:
- 1 lb ground beef
- 1/2 cup diced onion
- 1 clove garlic, minced
- 1 can (15 oz) tomato sauce
- 1 can (4 oz) diced green chilies
- 1 tsp ground cumin
- 1/2 tsp salt
- 8-10 corn tortillas
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
Instructions:
- Preheat oven to 375°F (190°C).
- Heat a large skillet over medium-high heat. Add ground beef, onion, and garlic. Cook until beef is browned and onion is tender, about 5-7 minutes.
- Stir in tomato sauce, green chilies, cumin, and salt. Cook for an additional 5 minutes, stirring occasionally.
- Warm tortillas in microwave or on stove top until pliable.
- Divide beef mixture evenly among tortillas. Roll up tortillas and place seam-side down in a 9x13 baking dish.
- Sprinkle shredded cheese over the top of the enchiladas.
- Bake for 20-25 minutes or until cheese is melted and bubbly.
- Garnish with chopped cilantro and serve hot.
