Delicious and Easy Vegetarian Black Bean Enchiladas Recipe

Ingredients:

  • 1 can of black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 can of enchilada sauce
  • 8 tortillas
  • 1 cup of shredded cheese
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375 degrees F.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the diced onion and cook until translucent.
  4. Add the diced red and green bell peppers and cook until tender.
  5. Add the minced garlic and cook for another minute.
  6. Add the drained and rinsed black beans and stir until heated through.
  7. Pour half of the can of enchilada sauce into the bottom of a baking dish.
  8. Fill each tortilla with a spoonful of the black bean mixture and roll up tightly. Place each rolled tortilla seam side down in the baking dish.
  9. Pour the remaining enchilada sauce over the top of the rolled tortillas.
  10. Sprinkle the shredded cheese over the top of the enchiladas.
  11. Bake for 20-25 minutes or until the cheese is melted and bubbly.
