Ingredients:
- 1 can of black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 can of enchilada sauce
- 8 tortillas
- 1 cup of shredded cheese
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375 degrees F.
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion and cook until translucent.
- Add the diced red and green bell peppers and cook until tender.
- Add the minced garlic and cook for another minute.
- Add the drained and rinsed black beans and stir until heated through.
- Pour half of the can of enchilada sauce into the bottom of a baking dish.
- Fill each tortilla with a spoonful of the black bean mixture and roll up tightly. Place each rolled tortilla seam side down in the baking dish.
- Pour the remaining enchilada sauce over the top of the rolled tortillas.
- Sprinkle the shredded cheese over the top of the enchiladas.
