Delicious Beef and Spinach Lasagna Recipe

Ingredients:

  • 1 lb. ground beef
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 (28 oz.) can crushed tomatoes
  • 1 (6 oz.) can tomato paste
  • 1 cup water
  • 2 tbsp. olive oil
  • 2 tsp. dried basil leaves
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 1 lb. lasagna noodles
  • 1 (10 oz.) package frozen chopped spinach, thawed and drained
  • 2 cups ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese

Instructions:

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large skillet, cook beef over medium heat until browned. Drain off excess fat. Add onion and garlic, and cook until onion is tender.
  3. Add crushed tomatoes, tomato paste, water, olive oil, basil, salt, and pepper. Bring to a boil, reduce heat, and simmer for 30 minutes.
  4. Meanwhile, cook lasagna noodles according to package directions. Drain and set aside.
  5. In a large bowl, combine spinach, ricotta cheese, and Parmesan cheese.
  6. To assemble, spread 1 cup of meat sauce in the bottom of a 9x13 inch baking dish. Arrange a single layer of noodles over meat sauce. Spread with one-half of the spinach mixture. Top with a third of mozzarella cheese. Repeat layers, and top with remaining mozzarella cheese.
  7. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
  8. Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.
