Ingredients:
- 6 large eggs
- 1/2 cup diced onion
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped zucchini
- 1/4 cup chopped fresh parsley
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 4 slices of whole grain bread
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, whisk together the eggs, diced onion, chopped red bell pepper, chopped zucchini, chopped fresh parsley, salt, and black pepper until well combined.
- Heat olive oil in a 10-inch oven-safe skillet over medium heat. Add the egg mixture to the skillet and cook for 5-6 minutes or until the edges are set.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes or until the top of the frittata is golden brown and the center is set.
- While the frittata is baking, toast four slices of whole grain bread until golden brown.
- Once the frittata is cooked, remove it from the oven and let it cool for a few minutes before slicing it into wedges.
- Serve each slice of frittata with a slice of whole grain toast.
