Ingredients:
- 2 medium zucchinis, spiralized
- 1/2 cup of your favorite pesto sauce
- 1/4 cup of pine nuts
- 1/4 cup of grated parmesan cheese
- 2 tablespoons of extra-virgin olive oil
- 1 clove of garlic, minced
- Salt and pepper to taste
Instructions:
- Begin by spiralizing your zucchinis into noodles. Set aside.
- Heat a large skillet over medium heat. Add the olive oil and minced garlic, and sauté for 1-2 minutes until fragrant.
- Add the zucchini noodles to the skillet, and sauté for 2-3 minutes until they begin to soften. Season with salt and pepper to taste.
- Next, add the pesto sauce to the skillet and toss with the zucchini noodles until well combined. Cook for an additional 1-2 minutes until heated through.
- Remove from heat and top with pine nuts and grated parmesan cheese.
- Serve hot and enjoy!
